Monday – beef stew (beef stock, vegetable juice, frozen mixed veggies & browned stew meat in the crockpot) (I know we were going to have this last week but ended up with lots of leftovers that I made the boys finish off instead)
Tuesday – Italian chicken & green beans (marinate boneless/skinless chicken breasts or tenderloins in Italian dressing, cover with Italian seasoned bread crumbs mixed with Parmesan. Bake. Yum)
Wednesday – sloppy joes with mac & cheese (church night – need quick & easy)
Thursday – homemade pizza
Friday – (tentatively) chicken & baked potatoes
The younger two boys are with their mom this weekend. I usually scale back on the cooking and we’re alot more flexible when it’s just us and the 12 year old.
